Flourless Peanut Butter Chocolate Ganache Sandwich Cookies

It’s Saturday! To celebrate the weekend, I went on an excursion to Nashville, tried a Ginger Spice Latte at Barista Parlor, and made these Flourless Peanut Butter Chocolate Ganache Sandwich Cookies by Two Peas & Their Pod!

These cookies are so fun and easy to make! First, make the peanut butter cookies. While they’re baking, start making the ganache and the peanut butter frosting.

Here’s what you’ll need for this recipe:

  • creamy peanut butter

  • granulated sugar

  • light brown sugar

  • egg

  • vanilla extract

  • baking soda

  • salt

  • chocolate chips

  • heavy cream

  • unsalted butter

  • powdered sugar

  • tablespoon milk

Maybe ganache sounds a little intimidating if you’ve never made it before, but it’s really the easiest thing in the world to whip up! All you need is a 1:2 ratio of cream to chocolate for a thick ganache. Microwave the cream until it’s steamy but not bubbling, then pour over chopped chocolate. Wait 30 seconds for the chocolate to melt, then stir until smooth.
