How to Make the Perfect Cake Pops
Tired of cracked cake pops? Chocolatey disasters? Drooping disappointments?
Here’s my easy, tried-and-true recipe for no-fail cake pops!
1. Bake a box cake mix according to the package, or bake your own homemade cake.
2. When cool, tear the cake into chunks and blend on low in a blender or food processor until the cake is finely crumbled but not paste-like. This only takes about 10 seconds. You can also crumble the cake with your fingers.
3. In a large bowl, combine about 3/4 cup (about half a tub) of icing of your choice with the crumbs. Mix with your hands until you can form a big ball that looks like play dough.
4. Next, scoop the dough into 1 tablespoon balls using a cookie dough scoop.
5. Roll the balls until they’re completely smooth, then chill in the refrigerator for about 10 minutes.
6. Meanwhile, melt about 1/4 cup of candy melts in the microwave, stirring every 30 seconds. Be sure not to let your candy melts burn!
7. Once the cake balls are chilled, dip the tip of a lollipop stick in the melted candy and insert about halfway into the ball. This is the “glue” that keeps everything secure.
8. Chill the cake balls for another 5 minutes. Meanwhile, melt about 2/3 cup of candy melts in a mug or microwave safe dish, stirring every 30 seconds.
9. Let the candy melts cool for a few minutes and prepare your cake pop board and sprinkles. If you don’t have a traditional cake pop board, you can use a Styrofoam block or a vase filled with flat marbles.
10. After 5 minutes, take the cake balls out of the refrigerator. They will warm up quickly, so I usually take 4 or 5 out at a time so I don’t feel rushed to dip them.
9. Dip each cake ball straight down and then right back up again, tilting the mug to fully coat them if necessary. Swirling the cake pop around too much can cause disastrous, but delicious, results.
10. Gently tap off the excess candy coating, then shower the cake pop in sprinkles or other decoration of your choice. Be patient with the first few… it takes practice! :)
11. You can store the cake pops at room temperature if they’re going to be eaten the same day, but I usually stick them in the fridge if you’re storing them overnight. It’s also best to keep them out of sight if you want them to stay around very long!
